Brushstroke is Bouley’s modern interpretation of kaiseki cuisine. If you’re one for prestige, it is the only restaurant in North America that houses two kitchens, each with their own Michelin star. The restaurant itself is completely covered in light wood. The menu is structured around the seasons. Each dining experience is catered to the customer, something Chef Yamada works hard to achieve.
